Caramel Pecan Banana Bread
This Caramel Pecan Banana Bread is a moist, soft banana loaf with chopped pecans and ribbons of caramel baked right into it, finished with more caramel poured over the top and a pile of pecans. It is a classic banana nut bread with caramel added twice, and a good way to use up the bananas going brown on your counter.
I never baked with pecans back home in Dublin. Since moving to Atlanta I have taken on Georgia’s love of them, and once the weather cools off they are one of my favorite things to bake with. The Best Caramel Pecan Banana Bread for Fall Mornings, Thanksgiving Week, and Holiday Brunch
Bake it on a Sunday and breakfast is handled for the next few days. It also works set out on the counter during Thanksgiving week, when the house is full and nobody wants to cook breakfast. Put it out with a knife and a pot of coffee and let everyone help themselves.

Ingredients Needed for Caramel Pecan Banana Bread
- Unsalted butter: Half a cup, softened. It gets beaten with the brown sugar first, so it needs to be soft enough to whip up light and creamy.
- Light brown sugar: One cup, packed. It is the only sugar in the loaf and it goes well with the caramel.
- Eggs: Two large, at room temperature. Beat them in one at a time.
- Vanilla extract: Two teaspoons, added with the eggs.
- Ripe bananas: Three, mashed, which is about 300 grams. The more brown spots on the peel, the sweeter and more banana flavored the bread.
- Sour cream: A quarter cup, mixed in with the bananas. It is part of why the loaf stays so moist.
- All-purpose flour, baking soda and salt: Whisked together in a separate bowl and folded in at the end, just until almost combined.
- Chopped pecans: Three quarters of a cup in total. Half a cup goes into the batter and the last quarter cup is saved for the top.
- Store-bought caramel sauce: A thick jarred caramel sauce, used twice. A third of a cup is swirled through the batter, and another quarter to third of a cup is drizzled over the cooled loaf.
- Flaky sea salt: Optional. A small pinch over the caramel topping at the end.

How to Make Caramel Pecan Banana Bread

- Heat the oven to 350°F and line a greased 9×5 loaf pan with parchment, leaving some overhang. Beat the softened butter and brown sugar with an electric mixer for 2 to 3 minutes until light and creamy, then beat in the eggs one at a time and add the vanilla.
- Mix in the mashed bananas and sour cream until combined.
- Whisk the flour, baking soda and salt in a separate bowl, then fold them into the banana mixture with a spatula until almost combined. Do not overmix.

- Fold half a cup of the chopped pecans into the batter and save the last quarter cup for the top.
- Spoon half the batter into the pan and drizzle over half the caramel, keeping it slightly away from the edges. Add the rest of the batter and the rest of the caramel, then swirl it through with a butter knife in 2 to 3 passes. Bake for 55 to 65 minutes, covering loosely with foil at the 45 minute mark if the top is getting dark, until a skewer pushed into a spot without caramel comes out with no wet batter.
- Cool the loaf in the pan for 15 minutes, then on a wire rack until completely cool. Toast the reserved pecans in a dry skillet for 2 to 3 minutes if you like, drizzle the cooled loaf with the remaining caramel, and sprinkle the pecans and a pinch of flaky sea salt over the top while the caramel is still sticky.

Variations
- Walnuts instead of pecans: Swap them in one for one, both in the batter and on top. Everything else stays the same.
- Add chocolate chips: Fold half a cup of semi-sweet chocolate chips into the batter along with the pecans.
- A little warm spice: Whisk a teaspoon of cinnamon into the flour. It suits the brown sugar and pecans, especially in the fall.
- Salted caramel: Use a salted caramel sauce for both the swirl and the topping, and leave off the flaky sea salt at the end.

Serving Suggestions

- After school snack: A plain slice before the caramel goes on, with a glass of cold milk, is a good after school snack. Save the topped slices for the grown ups.
- Wrapped as a gift: Wrap the cooled, plain loaf in parchment and tie it with string, with the caramel and pecans in small jars on the side so they can add the topping when they are ready to eat it.

Keep it in an airtight container at room temperature for up to 3 days. The caramel topping is sticky, so use a container with a lid rather than plastic wrap pressed onto the top. For longer than that, move it to the fridge. - Can I make Caramel Pecan Banana Bread ahead of time?
Yes. Bake the loaf a day ahead, let it cool completely and wrap it well. Add the caramel drizzle and pecans on the day you are serving it so the topping is fresh. - Can I freeze Caramel Pecan Banana Bread?
Freeze the loaf before the caramel and pecans go on top. Wrap the cooled, plain loaf (or individual slices) in plastic wrap and then foil, and freeze for up to 3 months. Thaw it on the counter still wrapped, then add the caramel drizzle and pecans. Toppings like nuts on a sticky caramel layer tend to soften in the freezer, which is why they go on after.

Tips & Tricks
- Leave a parchment overhang: Line the pan with parchment hanging over the long sides. Once the loaf has cooled for 15 minutes you can lift it straight out onto the rack.
- Start with room temperature eggs and soft butter: Take them out of the fridge about an hour before you bake. They mix into the brown sugar much more easily.
- Stop folding as soon as the flour disappears: Fold the dry ingredients in by hand until almost combined and then stop. The pecans still need to go in, and they finish the mixing for you.
- Swirl two or three times, no more: Run a butter knife through the batter in 2 to 3 passes. That gives you ribbons of caramel through the loaf instead of mixing it all in.
- Test a spot without caramel: Caramel on a skewer looks like wet batter, so push it into a plain part of the loaf. Start checking at 50 minutes, and if the top is getting dark at 45 minutes, lay a piece of foil loosely over the pan.

- 1 cup light brown sugar, packed 200 g
- 2 large eggs, room temperature

- 1¾ cups all-purpose flour 220 g
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup chopped pecans, divided 85 g
- â…“ cup thick store-bought caramel sauce
Caramel Pecan Topping
- ¼ to ⅓ cup store-bought caramel sauce
- ¼ cup reserved chopped pecans
- flaky sea salt, optional
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line it with parchment paper, leaving some overhang on the sides.
- In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer for 2 to 3 minutes until light and creamy.
- Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
- Add the mashed bananas and sour cream. Mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the banana mixture and gently fold with a spatula until almost combined. Avoid overmixing.
- Fold ½ cup of the chopped pecans into the batter, reserving the remaining ¼ cup for the topping.
- Spoon half the banana bread batter into the prepared loaf pan. Drizzle half the â…“ cup caramel sauce over the batter, keeping it slightly away from the edges.
- Spoon the remaining banana bread batter over the caramel. Drizzle the remaining caramel sauce over the top and gently swirl using a butter knife, making 2 to 3 passes through the batter.
- Bake for approximately 55 to 65 minutes. At the 45 minute mark, check the top of the bread for browning. If it is getting too dark, loosely cover the pan with aluminum foil and continue baking. Begin checking for doneness around 50 minutes. A skewer inserted into a section of bread without caramel should come out without wet batter.
- Allow the banana bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
- If toasting the remaining pecans, add them to a dry skillet over medium-low heat and toast for 2 to 3 minutes, stirring frequently until fragrant. Remove from the heat and allow to cool.
- Drizzle the remaining ¼ to ⅓ cup caramel sauce generously over the cooled banana bread, allowing some to run down the sides.
- Sprinkle the reserved chopped pecans over the caramel while it is still sticky. Finish with a small pinch of flaky sea salt if desired.
