Air Fryer Baked Potato
Crispy on the outside, fluffy in the center, and ready in a fraction of the time. This air fryer baked potato is my favorite way to make a baked potato without turning on the oven. It starts in the microwave to speed things up, then gets tossed in the air fryer to crisp up the skin just right. You still get that classic baked potato texture without waiting an hour.
When I’m short on time but still want something hearty, an air fryer-baked potato is always a winner. Starting them off in the microwave means they cook faster and more evenly. A quick brush of oil and a sprinkle of salt and pepper helps the skin crisp up beautifully in the air fryer, and the inside stays soft and steamy. It’s a great way to get a classic baked potato on the table without waiting an hour in the oven.

I’ve had plenty of jacket potatoes growing up, but this air fryer method has become a go-to for quick weeknights. I love that I can toss a few in while prepping other toppings, and they’re ready to go in no time. And with how crispy that skin gets, you’d never know it didn’t bake in the oven for an hour.

Tips & Tricks
- Microwave first to cut down air fryer time: Starting with a quick microwave softens the inside, so you don’t need to air fry for 45 minutes. It saves time and still gives you the fluffy texture you want.
- Brush with oil after microwaving, not before: If you oil them before microwaving, the skin won’t crisp up as well in the air fryer. Wait until you’re about to put them in the basket.
- Don’t overcrowd the air fryer basket: Give the potatoes enough space so the air can circulate. If they’re packed too tight, the skin will steam instead of crisp.
- Use similar-sized potatoes: This ensures they cook evenly. If one is much larger, it’ll need more time or end up underdone in the middle.
- Use tongs to flip halfway: Turning the potatoes over halfway through cooking helps all sides crisp up evenly and avoids soggy spots.
