Sloppy Joe Baked Potato
A baked potato loaded with sloppy joe mix and melty cheddar cheese. A fun and easy way to repurpose leftovers for dinner or lunch.

- 2 medium russet potatoes
- 2 teaspoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup leftover sloppy joe mix
- ½ cup shredded cheddar cheese
Optional Toppings:
- Sour cream and green onions
Wash and scrub the potatoes, then dry them with a towel.
Prick each potato a few times with a fork.
Place the potatoes on a microwave-safe plate and microwave for 6-8 minutes, flipping halfway through.
Brush the skin with olive oil and sprinkle with salt and pepper.
Air fry at 400°F for 15 to 20 minutes or bake in a 425°F oven for 35 to 40 minutes until the skin is crispy and a fork goes in easily.
Warm the sloppy Joe mixture in a small saucepan over low heat while the potatoes finish cooking.
Once the potatoes are done, slice them open and fluff the inside gently with a fork.
Spoon the hot sloppy joe mixture over each potato and sprinkle with cheddar cheese.
Garnish with sour cream and green onions if using.
Serve warm with extra black pepper or a dash of hot sauce if you like it spicy.
