Sloppy Joe Baked Potato

A baked potato loaded with sloppy joe mix and melty cheddar cheese. A fun and easy way to repurpose leftovers for dinner or lunch.

Equipment

  • Pastry brush
  • Small saucepan
  • Air fryer or baking tray
  • Microwave-safe plate

Ingredients
  

  • 2 medium russet potatoes
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup leftover sloppy joe mix
  • ½ cup shredded cheddar cheese

Optional Toppings:

  • Sour cream and green onions

Instructions
 

  • Wash and scrub the potatoes, then dry them with a towel.
  • Prick each potato a few times with a fork.
  • Place the potatoes on a microwave-safe plate and microwave for 6-8 minutes, flipping halfway through.
  • Brush the skin with olive oil and sprinkle with salt and pepper.
  • Air fry at 400°F for 15 to 20 minutes or bake in a 425°F oven for 35 to 40 minutes until the skin is crispy and a fork goes in easily.
  • Warm the sloppy Joe mixture in a small saucepan over low heat while the potatoes finish cooking.
  • Once the potatoes are done, slice them open and fluff the inside gently with a fork.
  • Spoon the hot sloppy joe mixture over each potato and sprinkle with cheddar cheese.
  • Garnish with sour cream and green onions if using.
  • Serve warm with extra black pepper or a dash of hot sauce if you like it spicy.
