Equipment

  • Large saucepan
  • Bowls
  • Measuring cups
  • Baking sheet lined with parchment paper
  • Non-stick spray or butter for hands

Ingredients

  • 3 tablespoons butter
  • 1 bag 10 oz mini marshmallows
  • 6 cups Rice Krispies cereal
  • ½ cup pastel M&Ms
  • ½ cup pink purple, and blue pastel chocolate melts (divided)
  • Sanding sugar assorted pastel colors

Instructions

  • In a large saucepan over low heat, melt the butter. Stir in the mini marshmallows and continue stirring until fully melted and smooth.
  • Remove from heat and immediately stir in the Rice Krispies cereal until everything is well coated.
  • Let the mixture cool slightly until it’s warm but easy to handle.
  • Spray your hands with non-stick spray or butter, then take a handful of the mixture and shape it into an egg.
  • Repeat with the rest of the mixture, placing each egg on a parchment-lined baking sheet. Let them set for about 10 minutes.

Decorating

  • Place the pink, purple, and blue chocolate melts in separate microwave-safe bowls. Microwave in 15-second intervals, stirring each time, until smooth.
  • Dip each Rice Krispie egg into one color of melted chocolate, letting the excess drip off. Place on parchment paper to set. If adding sanding sugar, sprinkle it on while the chocolate is still wet.
  • Once the first layer is set, dip each egg about two-thirds of the way into a different color to create a stripe. While this layer is still wet, press a few M&Ms onto the surface. Let them set on parchment paper.
  • Dip the eggs one-third of the way into the last color to complete the striped look.
  • Place the eggs back on the parchment paper and allow the chocolate to harden for about 10 minutes before serving.
