Sauce

  • ¾ cup mayonnaise
  • ¼ cup ketchup
  • 1 ½ teaspoons paprika
  • ½ teaspoon Cajun seasoning
  • ¼ teaspoon Worcestershire sauce

Onion Rings

  • 2 large sweet onions
  • 2 eggs
  • 1 ½ cups buttermilk
  • 2 cups all-purpose flour
  • 1 ½ teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • Oil for frying

Instructions
 

  • Mix mayonnaise, ketchup, paprika, Cajun seasoning, and Worcestershire sauce in a bowl. Cover and refrigerate.
  • Slice the onions into ½-inch rings and separate them. Discard the small inner rings.
  • In one bowl, mix flour, salt, garlic powder, onion powder, smoked paprika, and black pepper.
  • In another bowl, whisk buttermilk and eggs together.
  • Fill a Dutch oven or heavy pan with 2-2 ½ inches of oil. Heat to 325-350°F.
  • Dip each onion ring in the flour mixture, then in the buttermilk mix, letting any excess drip off, and coat again with flour. Place coated rings on a baking rack.
  • Fry 5-7 onion rings at a time for 2-3 minutes, turning occasionally, until golden. Remove with a slotted spoon and place on a paper towel-lined baking sheet. Serve hot with dipping sauce.
