  • 3 large sweet potatoes
  • 2 tablespoons olive oil
  • 3 tablespoons maple syrup plus extra for drizzling
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup chopped pecans

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  • Peeled and slice the sweet potato into 1/2-inch rounds
  • Toss the sweet potato rounds with olive oil, maple syrup, cinnamon, salt, and pepper in a large bowl until evenly coated.
  • Arrange the rounds in a single layer on the prepared baking sheet.
  • Roast for 35-40 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized around the edges.
  • Drizzle with extra maple syrup after removing from the oven and sprinkle with chopped pecans for added crunch.

Notes

**** If you slice the sweet potatoes thicker then increase the cooking time until the potatoes are tender.
