Ingredients
  

  • 6 bone-in skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp red pepper flakes optional
  • 1 tbsp fresh parsley chopped (for garnish)
  • Lemon slices for serving

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels and place them in a baking dish.
  • In a small bowl, whisk together olive oil, melted butter, garlic, lemon juice, lemon zest, oregano, thyme, salt, pepper, paprika, and red pepper flakes.
  • Pour the mixture over the chicken, coating each piece well.
  • Bake for 35–40 minutes or until the skin is golden brown and crispy, and the internal temperature reaches 165°F.
  • Let the chicken rest for a few minutes, then garnish with fresh parsley and serve with lemon slices.
