Ingredients
  

  • 3-4 lbs pork shoulder cut into chunks
  • 2 tablespoons oil
  • ¼ cup brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • ½ tablespoon chili powder
  • 2 cups chicken or beef broth or chicken bullion
  • 1 cup your favorite store-bought BBQ sauce

Instructions
 

  • In a small bowl, mix brown sugar, garlic powder, onion powder, smoked paprika, and chili powder to create a spice rub.
  • Sprinkle the spice rub over the seared pork, ensuring each piece is well-coated.
  • Set your Instant Pot to sauté mode. Add oil and let it heat up.
  • Sear the pork chunks until they get a nice brown crust. This adds a rich flavor to the dish. Once done, hit cancel.
  • Pour the Chicken stock over the pork. This will provide a savory base for the pork.
  • Close the Instant Pot lid and set it to High Pressure for 60 minutes. Let the pressure release naturally for about 15 minutes, then manually release any remaining pressure.
  • Remove the pork and using two forks, shred the tender pork directly in the pot.
  • Pour in your favorite store-bought BBQ sauce. Mix it well with the shredded pork until everything is evenly coated.
