- 2 pounds boneless skinless chicken thighs
- ½ cup honey
- ⅓ cup low-sodium soy sauce
- ¼ cup ketchup
- 2 tablespoons rice vinegar or apple cider vinegar
- 4 cloves garlic minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Place the chicken thighs in the bottom of the slow cooker.
Whisk together the honey, soy sauce, ketchup, vinegar, garlic, salt, and pepper in a small bowl.
Pour the sauce over the chicken thighs, spreading it around to coat evenly.
Cover and cook on low for 4 to 5 hours or until the chicken is tender and fully cooked through.
In the last 30 minutes of cooking, whisk together the cornstarch and water to make a slurry.
Stir the slurry into the sauce in the slow cooker and continue cooking uncovered for the remaining time to let the sauce thicken.
Once done, you can sprinkle with the chicken with sesame seeds and green onions before serving.
Serve the chicken with a generous spoonful of the sauce over the top.
