Preheat oven to 350°F and line a 12x14 baking sheet with parchment paper.
In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat, then return the beef to the skillet. Stir in taco seasoning and water, then simmer for 4-5 minutes until most of the liquid evaporates.
Spread tortilla chips evenly on the lined baking sheet.
Drizzle with queso and add the taco-seasoned beef on top.
Sprinkle with shredded cheese and jalapeño slices.
Bake for 4-5 minutes, until the cheese is melted and the chips are warm.
Remove from the oven and sprinkle with tomatoes, green onions, and cilantro. Serve with sour cream or any extra toppings you like.
