BBQ Sausage Bites are an easy appetizer made with smoked sausage, BBQ sauce, brown sugar, and simple seasonings. Perfect for parties, game day, or summer gatherings.
Preheat the oven to 400°F and lightly grease a baking dish or line a sheet pan with parchment paper.
Slice the smoked sausage into bite-sized pieces, about 1 inch thick.
Add the sausage to a large bowl and pour in the BBQ sauce, brown sugar, Dijon mustard, garlic powder, and paprika.
Stir until all the sausage pieces are well coated.
Spread the sausage evenly in the baking dish or on the sheet pan in a single layer.
Bake for 25–30 minutes, stirring halfway through, until the sauce is thickened and the edges are slightly caramelized.
Remove from the oven and let cool slightly before serving.

Don’t overcrowd the pan: Give the sausage a bit of space so it can caramelize instead of steaming. This is what gives you those slightly crisp edges.Use a thicker BBQ sauce: Thinner sauces won’t cling as well and won’t reduce the same way in the oven.Stir halfway through: This helps everything cook evenly and keeps the sauce from pooling in one spot.Cut evenly sized pieces: This helps them cook at the same rate so you don’t end up with some overdone and some underdone.Let the sauce thicken fully: If it still looks runny at the end, give it a few more minutes. The glaze should coat the sausage, not sit underneath it.
