I love hearing that, Vickie! Using sugar-free pudding is a great idea, too. I’m so glad you and your husband found a new keeper!

Oh I love this idea, April! A banana version would be so good, sliced bananas layered in with the pudding and cream sounds perfect. I say go for it, and happy early birthday to your husband! Come back and let me know how they turn out.

My husband doesn't like coconut but he loves banana pudding. I wonder if I could make a banana version of this. Maybe with sliced bananas in between the pudding and cream layers? I think I'm going to try it! His birthday is next month. :)

😂😂 This is hands down one of my favorite reviews ever! "Like a kid at Christmas" had me laughing because I know exactly what you mean. Your chocolate ganache twist sounds absolutely amazing, and now you've got me wanting to try it myself! Thank you so much for making my day and for sharing your version. I'm so happy you loved them, and I completely agree... one batch never seems to last long enough! ❤️

Holy Jalapeno! Merely seeing the pic made my mouth water. Like a kid @ Christmas, a 4 hour wait was too much for me. I snuck one beforehand & now want another. We're talking OUT of This World Decadent, yet light & ultra, Ultra delicious. Used lazy method with 2 cups graham cracker crumbs.Had a Jumbo size Hersheys special dark candy bar about to expire (cvs reward points are for chocolate right?) so made a quick ganache & spread over crust 1st. Cooled & then topped per recipe. Oh my the pic is pretty as is & would make exactly as recipe states next time & trust me there will be more than one next time. I could eat this every day. Far better than coconut cream pie. Highly, HIGHLY Recommend this scrumptious recipe.

In reply to <a href="https://tessiestable.com/coconut-cream-bars/#comment-3786">Lu-Anne</a>.

Hi Lu-Anne! Yes, vanilla sandwich cookies work really well as a substitute. Since they already contain sugar and a creamy filling, I would leave the filling in and use about 24 cookies, crushed into fine crumbs. You may find you need slightly less butter, so start with 6 tablespoons and add a little more only if the mixture seems dry. I think the vanilla flavor would be delicious with the coconut filling. Let me know if you give it a try!

I do not like graham cracker crust.
Would vanilla sandwich cookies be a good replacement minus the
cream filling? If so, how much would I use?
