In reply to Jocelyn. Hey Jocelyn, yes, you can use sugar-free instant vanilla pudding instead of regular. The sugar-free box is smaller (about 1 oz) but makes the same amount of pudding once prepared because it’s more concentrated. Just use one box of sugar-free pudding mix and keep everything else the same. It will still thicken up nicely and work perfectly for these bars! If you want a thicker filling use two boxes.

Can I use sugar free pudding instead of full sugar, if so, should I use a large box of pudding (1 oz)?

I make coconut cream pie for my husband every year on his birthday; he loves it so much. This year, though, we are trying these bars. They look amazing! Thanks for the great recipe!

LOVED that I didn’t have to turn the oven on for these! The toasted coconut on top was so great — definitely helped bring out the coconut flavor.
