Hi! Yes, you can use fresh apples instead of the canned filling. Just peel and dice them, then cook them on the stove for a few minutes with a bit of sugar and cinnamon until they soften slightly. You don’t need to cook them all the way down, just enough so they’re tender and not crunchy. Let them cool a little, then layer them over the cheesecake filling like normal.
